Sometimes when I say “I’m okay”, I want someone to look me in the eyes, hug me tight & say, “I know you’re not”

Buko Pandan
Buko Pandan is said to originate from the Bohol province. It is a favorite Filipino salad, smooth and creamy in texture, and served in almost every kind of party and special occasions in the Philippines. It is made using young coconut (“Buko”) and Screwpine leaves (locally known as “Pandan”). At first glance, this sumptuous dessert can be mistaken for Buko Salad because of the similarity in texture and dairy ingredients used. However, the green gelatin which contains the aroma and flavor of the Pandan gives the distinction.
